Mezcal cuishe comes from the Karwinskii agave, which its name in Zapotec refers to as “despeinado” or “copete”. Its main characteristic is that it looks like a maguey tree.
This type of mezcal has become a unique variation on its own, since it is derived from 3 other variations of the same Karwinskii agave: Madrecuishe, Bicuishe, and Tobasiche.
The difference between cuishe and madre cuishe lies mainly in the Karwinskii agave, while madrecuishe tends to be bulkier, cuishe tends to be more slender.

Unlike other agaves, the Cuishe maguey grows in soils with high calcium content and little rainfall. It does not grow directly on the ground, but has a cylindrical shape with a slender trunk up to four meters high. Although it is a wild agave, it can be adapted for cultivation.
The Cuishe maguey, considered microendemic, has a distribution limited to 132 square kilometers in the arid zones of the Tehuacán Valley and the Central Valleys of Oaxaca, at altitudes between 750 and 2000 meters above sea level. It is also known as Cuixe.
Due to the density of its core and its low water content, mezcal made from Cuishe maguey generally has a marked mineral aroma, with floral notes and a robust herbal flavor. Some experts argue that this mezcal, besides being very aromatic, leaves a slightly bitter aftertaste, so it is not suitable for all palates.
